While showcasing the excellence of Japanese cuisine crafted with seasonal ingredients, we also offer an extensive beverage selection that pairs perfectly with our dishes, transcending traditional genre boundaries. At times, we introduce new culinary experiences by pairing dishes with world-renowned tequila, primarily from the United States. Additionally, we aim to stimulate your senses not only through gourmet food and exquisite drinks but also through live performances by New York-based artists with experience performing at renowned live houses. Shozi Hiroaki

Hiroaki Shoji, who has perfected his craft through dedication to Japanese cuisine, has transcended traditional Japanese food to create a "modern Japanese" style at Restaurant UMITO Akasaka. He sources fresh, seasonal vegetables, high-quality seafood, and carefully selected meats, all of which are meticulously prepared. Additionally, he intentionally chose "blue"—a color seldom used for tableware—to highlight the restaurant’s commitment to the sea and to provide guests with a unique experience that challenges conventional norms.

Yamauchi Masataka

As a traveling sushi chef, he has provided "sushi experiences" in high-end resort areas like Niseko, impressing many VIPs with his skills. After graduating from middle school, he started working at a fish market and later transitioned to a sushi restaurant. He has experience in producing "Daikanyama Masa" and has served as the head chef for "Minami Azabu VIP-only" events for 100 guests. We are excited to welcome Masataka Yamauchi, a rising star among young sushi chefs, as a guest chef for a special limited-time dinner event.
